Things you'll find useful that most sharpening guides don't mention.
Boning knives need a lower angle than you think
Most butchers prefer 15–17° per side — lower than the German-knife factory 20°. A more acute angle slides through seams faster and requires less force, reducing fatigue on long shifts. I ask every new account what they're cutting before I touch the first knife.
Cleavers are a completely different beast
A cleaver doesn't need to be razor-sharp — it needs a convex, toothy edge that won't chip on bone. I grind them at 25–30° per side with a coarser finish. If someone's been sharpening a cleaver like a chef knife, I fix it on the first visit and it holds much better afterward.
The worst damage I see is from steel-rod honing
Butchers are fast with a honing steel, which is great — but a rod that's too aggressive rolls the edge or removes steel unevenly. I'll check your honing tools on the first visit and let you know if they're hurting your blades between services.
Meat-room humidity is real
Knives that live in a moist environment oxidize faster and can develop pitting along the edge. Carbon-steel butcher knives especially. I note the condition of every knife across visits so I can flag anything unusual before it becomes a problem.
Common Questions
Do you come to the shop or do we drop off?
Both. For recurring accounts I typically do scheduled on-site pickup — I come to you, bag the knives, return them sharpened. Drop-off at my North Austin location also works for shops that prefer it.
How long does a full knife set take?
A typical butcher set of 10–15 knives takes 1–2 business days. Rush turnaround (same day) is available for urgent needs at a small premium.
What if a knife needs more than sharpening — tip repair, re-profile, etc.?
I'll quote any repair work before touching it. Tip repairs, re-grinding, and full re-profiles are all available. Most are handled in the same visit or the next day.
Do you track each knife across visits?
Yes. Recurring accounts get a simple condition log per knife — edge angle, steel condition, any damage noted. Useful if blades start wearing unevenly or you want to know when to replace instead of repair.
What's the minimum commitment for a recurring program?
None. Programs are month-to-month. Most accounts stick around because the work speaks for itself, not because of a contract.
