Hand-Built Edges

Michael Kempf, owner of Seriously Fast Sharpening, at his sharpening setup in Austin, TX

Michael Kempf

Founder and sharpener

I'm Michael Kempf. I taught myself to sharpen in 2020 and turned it into a business here in Austin in 2022. Since opening I have put an edge on more than 20,000 blades, and every one of them went through my hands. No counter, no rotating staff, nobody I hand your knives off to.

I don't sharpen every knife the same way, because every knife is not the same. A chipped German blade that lives in the dishwasher and a hand-forged Japanese one need different work, and I match the method to the blade instead of to whatever I happen to be loyal to. If you want a full whetstone edge, I offer that as well. Just ask.

None of that came from a certificate. It came from repetition, and from customers who bring their knives back and tell me how the last edge held up. That is the only way I know to learn this work, and it is why the reviews directly below are the part of this page I would read first.

An outstanding job and a very classy presentation - each knife returned wrapped in crisp black paper, tied with string and with edge protectors yet!! The knives all slide down thru a tomato skin like it was butter.

Extremely easy process (did the drop and pickup at his house) and very sharp kitchen knives. Better than the manufacturer's recommended service. We'll definitely bring them back but it will likely be a while!

Michael did a great job sharpening my Shun shears. He cleaned and oiled them too, and they feel like new again. Dropoff and pickup was quick and easy. Would definitely go back.

I've been using Seriously Fast Sharpening for my restaurants for 3 years now and Michael is simply the best in Austin. He services my kitchen knives regularly and I trust him with my personal collection of $1000+ Japanese knives, which says a lot. Most recently he brought several back from rough shape. some major chips, broken tips, pretty serious damage. He restored them to like-new condition with exactly the specific edges I requested. He actually listens to what you want, which is rare to find. If you run a restaurant kitchen or take your knives seriously, this is your guy.

I dropped of a old lawn tool machete, I wasn't sure would even take an edge, and he had it sharper than ever in a flash!

Common questions

Frequently asked

How much does knife sharpening cost in Austin?

Knives under 7" are $15. Knives 7" and over are $20. Chip and tip repair is included at no extra charge. Serrated knives are the same price as any knife of the same length.

How long does a professional sharpening last?

Edge retention depends on how often you cook. A home cook sharpening weekly or less can expect one to three months between sharpenings. Heavy home use (cooking every day) narrows that to two to six weeks. In a commercial kitchen, blades may need attention every few days to two weeks.

No. Leave your knives in a bag on your porch and I will pick them up, sharpen them, and return them. You pay after service.

Is there a minimum for porch pickup?
