Sharpening Angle (The Confusing Part)
Global's edge geometry confuses most sharpeners. They sharpen at 15° measured from the spine — not 15° per side like most knives. This creates a total edge angle of about 15-17°. If you sharpen at "15° per side" (30° total) like you would a German knife, you'll ruin the geometry. Professional sharpening strongly recommended.
Common Problems
Wrong Sharpening Angle
Most home sharpeners apply standard 15-20° per side angles, which doesn't match Global's unique geometry. The edge becomes dull and thick.
Slippery Handle When Wet
The dimpled stainless handle is designed for dry-hand use. Wet or oily hands will slip. Keep a towel nearby.
