Victorinox Knives — Complete Guide
The best value professional knife under $50. Here's how to care for and sharpen Victorinox Fibrox Pro knives.
Book Victorinox SharpeningVictorinox (yes, the Swiss Army Knife company) makes one of the best value chef knives in the world: the Fibrox Pro. At $40-50, it's the knife professional chefs buy when they need something reliable but don't want to spend $150+.
What Makes Victorinox Different
- Steel: X55CrMo14 stainless (56 HRC)
- Edge angle: 15-20° per side
- Handle: Fibrox (textured thermoplastic) — slip-resistant
- Price: $40-50 for 8" chef knife
Sharpening Angle
Victorinox knives come from the factory at about 15° per side, but the softer steel (56 HRC) performs well at 18-20° too. The slightly more obtuse angle gives better edge retention for daily professional use. We typically sharpen Victorinox at 18° for restaurant customers who need the edge to last through a full week of heavy use.
Common Problems
Customers Neglect Sharpening Because "It's Cheap"
The biggest problem: people assume a $45 knife isn't worth professional sharpening. Wrong. Victorinox uses quality Swiss steel that sharpens beautifully and holds an edge well. These knives deserve proper care.
Handle Wear in Commercial Kitchens
The Fibrox handle is durable but not indestructible. After 2-3 years of heavy restaurant use, the textured surface smooths out and becomes slippery. Replace the knife at that point.
