The parent company is Zwilling J.A. Henckels. They make two separate product lines under the Henckels name.
"Henckels" alone -- Henckels International -- is the budget line made in Asia.
"Zwilling J.A. Henckels" is the premium German-made line from Solingen. The logo is two figures (twins) vs the single figure on Henckels International.
Where Zwilling Wins
Friodur ice-hardening. Zwilling's proprietary process creates a blade that is durable, corrosion-resistant, and slightly flexible. HRC 57 steel made in Solingen using generations of German blade craft.
The construction is genuinely better -- full tang, proper balance, forged not stamped on the premium lines. You can feel the difference in your hand compared to budget Henckels.
Where Henckels International Wins
Price. That is the only category. Henckels International is significantly cheaper and acceptable for someone learning to cook who is not ready to invest $150+ in a chef knife. Once you cook regularly, you will notice the difference and want to upgrade.
What I See Sharpening Both
Zwilling and Henckels International sharpen very differently. Zwilling's Friodur steel is consistent and holds an edge well. Henckels International steel is softer and less consistent -- it gets sharp easily but the edge does not last as long.
I see a lot of Henckels International knives come in that look new but perform poorly because the steel never held a proper edge. Zwilling knives, even old ones, still respond well to sharpening and come back to a quality edge.
