The Four Knives Worth Owning
If you prep vegetables, proteins, and herbs in bulk, a well-sharpened 8-inch chef knife handles 90 percent of the work. The key word is sharpened. A dull $200 Wusthof performs worse than a sharp $40 Victorinox Fibrox. Edge quality matters more than brand.
A santoku is slightly lighter and shorter than a chef knife, with a flatter belly that suits a push-cut technique over rocking. If you meal prep a lot of vegetables and find an 8-inch chef knife unwieldy, a santoku is worth trying. Hollow-ground dimples reduce sticking on starchy ingredients.
Peeling, trimming, scoring, removing eyes from potatoes. A paring knife is not optional for serious meal prep. It takes far longer to wear down than a chef knife since it does lighter work, but when it goes dull it goes dull fast and most people never think to sharpen it.
