What to Skip

Pull-through sharpeners
They remove too much metal and leave a weak, toothy edge. Not appropriate for professional results.
Basic whetstones for primary business use
Whetstone sharpening takes 10–20 minutes per knife. At $10 per knife, that is $30–60 per hour. Belt grinders do the same knife in 90 seconds.
Electric honing rods
Honing realigns the edge but does not sharpen. Customers often confuse the two. You are a sharpener, not a honer.
Cheap Amazon belts
