After a full progression, a Global G-2 will shave arm hair effortlessly — and that edge lasts well if the owner hones regularly.

Wüsthof: The X50CrMoV15 steel is the German workhorse standard. It takes a little longer to sharpen than Global but the edge geometry on the Classic line is almost perfect out of the box. The bolster on full-bolster models (Classic, Ikon) creates a "heel step" that takes a few extra passes at the heel — something I always address for customers because neglected bolsters make the last centimeter of blade useless.

Bottom line: both are top-tier brands that will last decades if sharpened regularly. The question is whether you prefer the nimble feel of Japanese-influenced design or the solid German workhorse.
