How often should I sharpen my kitchen knives?

What's the difference between honing and sharpening?
Honing realigns an edge that has folded over — it does not remove metal. Sharpening actually removes metal to create a new edge. Do the first yourself with a honing steel between uses. Leave the second to a professional a couple times a year.
How much does it cost?
